Leaving Paris – In Praise of the Swiss Mountains

Located in the heart of Zermatt, the Cervo offers a modern transcription of the alpine hunting lodge, between design, raw materials and local culture.

By Clara Le Fort

The name of the hotel comes from mount matterhorn (Cervino in Italian, which also means “little deer”), an emblematic summit of 4,478 meters above sea level which dominates the resort of Zermatt.

To Zermatt, the Cervo is much more than an alpine lodge: at the heart of the whole, an old holiday chalet from the 1940s reminds us that the hotel is part of the landscape, reveals the spirit of the place. Its name comes from mount matterhorn (Cervino in Italian, which also means “little deer”), an emblematic summit of 4,478 meters above sea level which dominates the Swiss resort. Built in symbiosis with the environment, the establishment imagined by the child of the country and son of a hunter Daniel Lauber is a modern transcription of an alpine hunting lodge: a welcoming place in the heart of the forest, an idea of discreet luxury. and contemporary style on the hillside, raw materials and an art of living that is more design than decoration.

In 2009, the Cervo opened its doors above the village of Zermatt with five chalets, sixteen rooms and a unique Swiss restaurant. Acclaimed, this “mountain hideout for insiders” reopened in 2020 with 54 rooms and suites, plus six separate apartments. “We imagined the lodge as a hamlet: gathered together, the three or four-storey Swiss chalets display wooden facades and dark granite basements,” explains Daniel Lauber. Old wooden beams, Swiss larch elements, local stone, heat pumps… The hotel was not only built as a sustainable place but also largely oriented towards “mindfulness”.

Brand new, the Mountain Ashram Spa is in this image: Japanese onsen, alpine sauna, room dedicated to well-being rituals (yoga, Pilates, meditation), presence of seasonal yogis, the extension of the hotel is an opportunity to explore the surrounding mountains, like yourself! “The pandemic has revealed the need to become more anchored in the places visited: to be nomadic, of course, but in a proactive and forward-looking way, by forging human ties or enriching oneself through contact with local culture, like young artists,” adds Daniel Lauber.

Finally, the two new restaurants echo this need for anchorage: Madre Nostra offers a Piedmontese menu imagined from local resources (products sourced within a radius of 150 kilometers) while Bazaar is an oriental haunt whose menu, essentially vegetarian , echoes the philosophy of the spa. This does not prevent the Lebanese labneh from being made from Swiss milk from neighboring mountain pastures. Yes, Cervo is an authentic mountain address.
