The Paul-Augier hotel school has just benefited from a vast renovation and extension operation. It took three years of work, because they took place while the establishment was busy, constraining the schedule, for a total budget of 34.6 million euros financed by the Region. It is therefore natural that the president of the PACA regional council, Renaud Muselier, attended the inauguration yesterday, alongside the mayor of Nice Christian Estrosi, the rector of the Nice academy Natacha Chicot and many elected officials and old students. The opportunity also to give newcomers their case containing kitchen equipment, offered by the Region. “It is important that the community make this gesture; it is part of our policy of equal opportunitiescomments Renaud Muselier. Training should be accessible to everyone. By giving them this briefcase, we are showing that the financial aspect should not be an obstacle to their professional projects.” Principal Denis Ferault did not hide his satisfaction “to be able to lead students on the path to success with high quality technical means.”
1 Nearly 1,500 students, apprentices, interns and work-study students attend the Paul-Augier hotel school. Particular care has been taken in renovating the kitchen and creating another space dedicated to learning. “Two kitchens in a “suspended central box” have been fitted out. To give an image, it is as if we had installed a box in the center of the building, in the large hall, indicates Yannick Barbat, director of the north-east branch of the AREA Région Sud (the Local Public Company – EPL – of engineering). This makes all the more sense as it amounts to placing the kitchen at the heart of the school. »
2 In the existing kitchens, all the circuits have been redone, electricity, sanitary, plumbing, etc. Teachers and students have access to state-of-the-art high-end equipment. “The professionals who have seen the installations are jealous of us”says the headmaster.
3 The building has been redesigned to limit energy expenditure. Outside, the sunshade blades have been replaced. Inside, insulating materials keep it cool in summer and warm in winter.
4New kitchens have been created to allow future professionals to train on high quality equipment. “We have also designed a large gym that is both practical and modular”smiles Fabrizio Bucci, from the architecture firm ABC Architectes.
5 The three training restaurants – which have been awarded the Nissard cuisine label – have been renovated in the pure spirit of the Baie des Anges, with symbolic names: Les Galets, La Prom’ and La Rotonde. They allow young people to train in real conditions, including working in a gastronomic establishment.
